Global elvers (baby eel) production

According to the Food and Agriculture Organization of the United Nations, elver (baby eel) production has increased steadily in recent years, reaching a global production of over 16,000 tonnes in 2016. This is due to an increase in demand from Asian markets, where elvers are considered a delicacy. Elvers are typically harvested in the wild, although there is some aquaculture production of the species. The main methods of harvesting elvers are by hand or by using nets. In terms of global production, China is the leading producer of elvers, followed by Japan and South Korea. These three countries account for over 80% of global production. Elvers are typically sold live in the Asian markets, where they command high prices. In Japan, for example, the price of elvers has increased from around US$300 per kilogram in 2000 to over US$2000 per kilogram in recent years. There is a growing demand for elvers in Europe as well, where they are considered a delicacy. In France, for example, the price of elvers has increased from around US$200 per kilogram in 2000 to over US$1000 per kilogram in recent years. The increasing demand for elvers is putting pressure on wild populations of the species. As a result, there is a need to develop sustainable harvesting methods that do not put undue stress on wild populations. Aquaculture is one potential solution to this problem. By farming elvers in controlled environments, it is possible to produce large quantities of the species without putting pressure on wild populations.
